Nutrition Focus: Energy Bites!!

A quick an easy snack to make and take with you. Great for after a workout, as a snack or treat!

 

Ingredients for Cranberry Pistachio variation:

1 Cup packed dates
1/2 Cup Honey
1 Tbsp. ground flaxseed
pinch of salt
1 1/2 cups uncooked old-fashioned oats
1 Cup shelled pistachios
1 Cup dried cranberries

 

Ingredients for Pumpkin Spice Variation:

1 Cup packed dates
1/4 Cup honey
1/4 Cup canned pumpkin
1 Tbsp. chia seeds
1 1/2 tsp Pumpkin Pie Spice
pinch of salt
1 Cup uncooked old-fashioned oats
1 Cup toasted coconut flakes
1 Cup toasted pepitas (pumpkin seeds)

 

Instructions:

-Process all ingredients listed before oats in a food processor until mixture forms a smooth paste that is still mixable. You may add extra honey if the consistency is not right.
-In a medium bowl, combine last 3 ingredients (oats and add ins)
– Add paste mixture to dry ingredients and mix well until combines
-Cover and refrigerate for at least 30 minutes
-Use a small scoop or spoon to form mixture into balls
-Can be stored for 2 weeks in fridge!
